All you need is about an hour to prepare and bake 24 cupcakes from this simple cupcake recipe. It has low fat contents and a compelling vanilla fragrance.

INGREDIENTS

  • 2 stick butter
  • 1½ cup of sugar
  • 1 tbsp. of baking powder

  • 4 large eggs
  • 1 cupof milk (1% low-fat)

DIRECTIONS

  • Preheat oven to 350°F. Fix paper liners untoa 12 average-size muffin pan.
  • Beat sugar, baking powder, salt and butter in a sizeable bowl and blend with an immersion blender on high speed (one minute). Add in eggs and blend an extra 2minutes.
  • Turn down the mixer speed; add in vanilla, milk, and then flour.
  • Spoon this batter into the muffin cups.
  • Bake for 20-25 minutes and test with a wooden pick (must come out clean or with very little fragments). Cool in the pan for about 5minutes before finally removing to rack.

2) CHOCOLATE CUPCAKE RECIPE

This is an easy cupcake recipe thatwill yield 24 cupcakes and should take you just about 55minutes to prepare.

INGREDIENTS

  • 2 stick butter
  • 1½ c. sugar
  • 0.67 c. unsweetened cocoa powder
  • 1 tsp. of baking powder
  • ½ tsp. of baking soda
  • ¼ tsp. of salt
  • 2 large eggs
  • 1 c. of milk
  • 2 tsp. of vanilla extract
  • 2½ c. of all-purpose flour

DIRECTIONS

  • Preheat oven to 350°F. Fit paper liners unto a 24 average-size muffin pan.
  • With a hand mixer on high speed, beat butter, cocoa, sugar, baking powder, salt and baking soda in a sizeable bowl. Slowly add in beaten eggs, and then milk, vanilla and flour (evenly blended).
  • Spoon ¼ cup of batter into muffin cups (about 2/3 full).
  • Bake for 20-25minutes till it is wooden pick tested for preparedness.
  • Take out of the oven and cool in the pan for about 5minutes before finally transferring to a rack.

You can store this for up to a day in a normal room temperature or keep it refrigerated for up to a month.

3) RED VELVET CUPCAKES RECIPE

This is quite not an easy cupcake recipe but it’s worth every effort. It’ll take you approximately 2½ hours to finish 24 cupcakes.

INGREDIENTS

  • 24 chocolate Hershey’s Kisses
  • 1½ stick butter
  • 1½ c. of granulated sugar
  • ¼ c. of unsweetened cocoa powder
  • 1 tsp. of baking soda
  • 1 tsp. of salt
  • 1 tsp. of vanilla extract
  • 2 large eggs
  • 1 c. of buttermilk
  • 2 tbsp. of liquid red food color
  • 2 tsp. of white vinegar
  • 2½ c. of cake flour (not self-rising)
  • 2 bricks of cream cheese
  • 1 stick butter
  • 1½ cup of confectioners’ sugar
  • 1 tsp. of vanilla extract

DIRECTIONS

  • Preheat oven to 350°F and line a 24 regular-size muffin pan with paper liners.Place a candy in the center of each.
  • Mix and blend butter, cocoa powder, sugar, baking soda, vanilla and salt for 2minutes in a bowl. Blend in beaten eggs until uniformly mixed. Then, stir in buttermilk, food-color and vinegar until uniformly blended. Reducing the mixer speed, beat in 3 additions of flour with 2 intermittent additions of buttermilk until evenly blended. Spoon out ¼ cup of the batter and dump over the centrally placed candy in each muffin cup.
  • Bake your batter for 20-25minutes, and if needle-tested ready, pull out of the oven and cool for some minutes. Then, take out from pan and place on rack to cool completely.
  • For frosting: Beat butter and cream cheese under medium speed in a medium-size bowl. When smooth, reduce the speed, and then add vanilla and confectioners’ sugar. Again, increase the speed and beat till fluffy and smooth.
  • You may now frost your cupcakes with some love-shaped decors sprinkled over, and then refrigerate if needed.

4) CANDY APPLE CUPCAKES

These wonderful cupcakes are made from this very simple cupcake recipe. It will yield 24 cupcakes and should take you just an hour to prepare and bake.

INGREDIENTS

  • 3 c. of all-purpose flour
  • 2 tsp. of baking soda
  • 2 tsp. of pumpkin pie spice
  • ½ tsp. of cinnamon
  • ½ tsp. of salt
  • 1½ c. of unsweetened applesauce
  • 1 c. packed light brown sugar
  • ½ c. granulated sugar
  • ½ c. unsalted butter

  • 2 large eggs
  • 1 package 50 caramel candies
  • 2 tbsp. heavy cream
  • Ice cream sticks
  • Red jimmies or sprinkles

DIRECTIONS:

  • Mix flour, pumpkin pie spice, baking soda, salt and cinnamon in a medium-sized bowl.
  • Beat the applesauce, butter, sugars, eggs and sour cream in another bowl with your mixer on a low. Add flour mixture and blend evenly.
  • Spoon the batter out and dump into the muffin cups. Then, bake for half an hour. When ready, cool, while in pan for about 5minutes. Then, take out from the pans and cool off completely.
  • In a saucepan, heat caramels until melted. Add in heavy cream and stir to combine. Cool it for 2minutes and quickly spread 2 teaspoons of glaze on cupcakes, while the mixture is still warm.
  • Fix an ice cream stick,centrally, into the cupcakes and sprinkle some jimmies as toppings.

5) BLUSHING GRAPEFRUIT CUPCAKES

INGREDIENTS

Cupcakes:

  • 1¼ c. of all-purpose flour
  • ¾ c. of granulated sugar
  • 1¼ tsp. of baking powder

  • 3 tbsp. plus 1 tsp fresh grapefruit juice

Frosting:

  • 1 package cream cheese

  • 1¼ c. of confectioners’ sugar
  • 2 drop red food color
  • 3 c. of grapefruit segments, preferably Ruby Red
  • Mint leaves(for garnishing)

DIRECTIONS

  • Heat your oven to 350°F. Fit 16 muffin liners unto baking pan.
  • Stir flour, baking powder, sugar, salt and baking soda in a sizeable bowl. Create a large hole in the center and pour in oil, egg yolks, water, the grated peels and 3 tablespoons of grapefruit. Whisk to mix the liquids, and gradually whisk into the flour mixture till evenly mixed.
  • In another bowl, beat egg whites with a mixer on high speed. When frothy, add the remaining 1 teaspoon of grapefruit juice and beat into it. Stir 1/3 of beaten egg whites into the batter and carefully mix the remaining whites into it until fully blended.
  • Spoon out the batter into the muffin cups and bake for 15-20minutes until tops are golden or browned. Then, cool for 5minutes in the pan before moving to rack.
  • To make the frost: With a mixer on low speed, beat all ingredients (grapefruit segments exempted) into a bowl till just blended. Increase to high to blend till smooth and fluffy and add in 1 finely chopped grapefruit segment and stir into it.

Spread this on cupcakes. Drain the remaining segments of grapefruit and fit onto cupcakes; you may garnish with mint.

6) ORANGE AND CREAM CUPCAKE RECIPE

INGREDIENTS

  • 1 box of yellow cake mix
  • 1 package Bird’s Imported English Dessert Mix for Custard Style Pudding
  • 1 tbsp. of grated orange peel
  • 12 orange sections

DIRECTIONS

  • Preheat oven to 350°F. Then, fit paper liners unto a 24 regular-size muffin pan.
  • Prepare batter from the box of cake mix and spoon out into the lined cups. Bake per the directions on the box. Let it cool in pan for about 5minutes before finally transferring unto a rack.
  • Create a small hole on the top of cupcakes.
  • Make custard per the box’s direction and blend in the grated peel. Let it cool. Then, spoon into a sturdy plastic bag (ziptop food bag), cut one corner or tip and pipe the custard mix into the cupcake holes. Fit a half orange section into the filled-in custard portion in each cupcake.
  • Now, refrigerate until ready to serve.

7) LEMON BLUEBERRY CUPCAKES
