- 8 ounces pad Thai or lo Mein noodles
- 2 tablespoons vegetable oil
- 1 clove garlic, minced
- 2 tablespoons fresh lime juice (from about 1 medium lime)
- 2 large eggs
- 1 1/2 tablespoons soy sauce
- 1/8 teaspoon red pepper flakes
- 2 tablespoons brown sugar
- 3 green onions, sliced
- 1 teaspoon fish sauce
- 1/4 bunch fresh cilantro, leaves only, roughly chopped
- 1/4 cup chopped, unsalted peanuts
Method of Preparation
In a large pot bring water to a rolling boil then place the noodle in the boiling water in the pot and cook for about 7 to 10 minutes before removing from the heat when the noodle are tender enough, drain and set aside.
Heat the vegetable oil in a large skillet over medium heat then add garlic and let it to cook for about 1 to 2 minutes or until soft enough.
Beat the eggs in a medium bowl and whisk with a folk then pour in the skillet and cook till the eggs get solid but don’t really get dried in the heat. Gently move the eggs around the skillet as they cook for about 2 minutes and remove the skillet from the heat and put aside when the eggs get well cooked.
Combine the lime juice together with, sugar, soy sauce, fish sauce and red pepper flakes in a small bowl and stir well to evenly combine. Add the sauce mixture into the skillet with scrambled eggs and add the noodles and be sure to toss it so as it coats in the sauce.
Finally add the green onions, peanuts and cilantro on to the noodles and slightly mix it to evenly combine and serve warm.
