Ingredients

  • 1/3 cup fresh lemon juice
  • 2/3 cup fresh orange juice
  • 2 cups cubed fresh pineapple
  • 1/2 teaspoon grated lemon zest
  • 2 cups strawberries, hulled and sliced
  • 3 kiwi fruit, peeled and sliced
  • 2 oranges, peeled and sectioned
  • 2 cups blueberries
  • 1 cup seedless grapes
  • 1 teaspoon vanilla extract
  • 3 bananas, sliced
  • 1/2 teaspoon grated orange zest
  • 1/3 cup packed brown sugar

Instructions

In a saucepan of a medium size and over medium high heat, bring the lemon and orange juices to a boil then turn the heat to medium and cook just below boiling point as it bubbles for about 5 minutes until it slightly thickens. Then remove from the heat and add vanilla and toss to mix then let to cool

Take a large glass bowl and place pineapple, strawberries, kiwi fruit, bananas, oranges, grapes and blueberries in the respective order. Cover the bowl filled with the mixture and place in refrigerator for about 3 or 4 hours then serve while cold.
