INGREDIENTS

  • 1 tablespoon of olive oil
  • 3 zucchini (¼-inch chopped in thick rounds)
  • Kosher salt
  • Freshly ground black pepper
  • 1/3 cup of marinara sauce
  • ½ cup of finely grated mozzarella
  • ¼ cup of pepperoni minis
  • 1 tablespoon of Italian seasoning

DIRECTIONS:

Preheat your oven to 400 degrees F.

Pour olive oil into a skillet and heat over medium-high heat. In batches, add the zucchini slices and sauté about 2 minutes on each side, until golden. Then, season with salt and pepper.

Fill a sizeable baking sheet with the sautéed zucchini rounds and top each round with mozzarella, marina and pepperoni minis.

Bake this in the preheated oven for about 2 minutes, until cheese is melted.

If you wish, you may sprinkle with some Italian seasoning and serve.

2: LEMON HERB SALMON AND ZUCCHINI

INGREDIENTS

  • 4 zucchinis (chopped)
  • 2 tablespoons of olive oil
  • Kosher salt and freshly ground black pepper

For the salmon;

  • 2 tablespoons of brown sugar (packed)
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of Dijon mustard
  • 2 cloves of garlic (minced)
  • ½ teaspoon of dried dill
  • ½ teaspoon of dried oregano
  • ¼ teaspoon of dried thyme
  • ¼ teaspoon of dried rosemary
  • Kosher salt
  • Freshly ground black pepper
  • 4 (5-ounce) salmon fillets
  • 2 tablespoons of chopped fresh parsley leaves

DIRECTIONS:

Preheat your oven to 400 degrees F and get a baking sheet greased or sprayed with a non-stick cooking spray.

Pour the brown sugar along with lemon juice, garlic Dijon, oregano, dill, thyme, garlic and rosemary into a bowl. Whisk together and set aside.

Place zucchini, in a single layer, unto the baking sheet. Then, drizzle with your olive oil and season with some pepper and salt. Add salmon too, in a single layer, and brush the herb mixture on each fillet.

Now, cook in the oven for about 16 to 18 minutes. When ready, garnish with parsley and serve.

3: BAKED ZUCCINI FRIES

INGREDIENTS:

  • 1 cup of Panko (a Japanese type of bread crumb)
  • ½ cup of freshly grated Parmesan cheese
  • 1 teaspoon of Italian seasoning
  • Kosher salt
  • Freshly ground black pepper
  • 4 zucchini(quartered lengthwise)
  • ½ cup of all-purpose flour
  • 2 large eggs(beaten)
  • 2 tablespoons of chopped fresh parsley leaves

DIRECTIONS:

Preheat your oven to 425 degrees F and spray the baking sheet with a non-stick spray.

Mix Panko with Parmesan and the Italian seasoning in a sizeable bowl and season with pepper and salt. Keep aside.

In batches, flour up the quartered zucchini (dredge in flour), dip into beaten eggs, and then dredge in the Panko mixture.

Arrange zucchini on the prepared baking sheet, slot them into the oven, and bake for 20 to 22minutes, until crisp and golden brown.

Garnish with some parsley, if desired, and serve.
