  • 175g of margarine
  • 175g of caster sugar
  • 3 large eggs
  • 175g of self-raising flour(sifted)

  • 1tsp of vanilla extract

  • Preheat oven to 180°C.
  • Grease a round 18cm cake tin with some butter and fit a non-stick baking parchment to the base of tin.

  • 1 cup of white sugar
  • ½ cup of butter plus extra for pan
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1½ cups of all-purpose flour
  • 1¾ teaspoons baking powder
  • ½ cup of milk


  • Preheat your oven to 350 degrees F.
  • Grease a 9×9-inch pan with some butter and flour the base.
  • Mix your sugar into the butter in a medium-size bowl. Beat in your eggs, one at a time, and stir in vanilla.
  • Sift and mix baking powder and flour together, and then stir into the earlier mixture until uniform.
  • Now, add the milk and stir for a smoother batter.
  • Spoon out batter into the prepared pan and bake (between 30 to 40 minutes) –For a certainty of readiness, an inserted needle must come out clean.

  • Spoon batter evenly into the pans and bake for about 30-35 minutes. To be sure of readiness, insert a needle and pull out. If it comes out clean, cake is done.
  • Eject from oven and cool in pans for about 5 to 10 minutes and then transfer to a wire rack for complete cooling. You may now top with your whipped frosting.


A moist cake drenched with vanilla syrup. Many of my friends have this as their personal best vanilla cake recipe. You can make these cakes for a wide range of fabulous celebration.


  • 250g of unsalted butter plus extra for greasing
  • 250g of golden caster sugar
  • 1 tspof vanilla paste
  • 5 large eggs(cracked into a jug)
  • 85g of plain flour
  • 100g of full-fat Greek yogurt
  • 250g of self-raising flour
  • 3 tbspof semi-skimmed milk
  • For the syrup:
  • 50g of golden caster sugar
  • ½ tspof vanilla paste


  • Preheat your oven to 160 degrees C.
  • Grease and line the cake tin with non-stick baking paper.
  • Beat butter, sugar, ¼ teaspoon of salt and vanilla until light, and then beat in the eggs (one at a time). When done, add in a tablespoon of flour and beat in yogurt.
  • Mix flours separately, and then pour gradually and mix into the wet mixture, and then the milk. Mix well till evenly combined.
  • Now, spoon the batter into baking tin and slot into the oven and bake for 1hour 20minutes. – Always test for readiness.
  • While waiting for cake, you can make the syrup; mix 50ml of water with vanilla and sugar, and set over fire until sugar is dissolved.
  • When cake is done, cool for about 30 minutes, make deep holes in it with a skewer, and pour your syrup over it. Let syrup soak deeply, and add more until cake absorbs no more or syrup is finished. You can now wrap your cake or do any topping or icing of choice and serve or store your cake.


This is a version of basic vanilla cake recipes but without any eggs. Don’t lose interest yet; there’s some yogurt in here and it tastes just as wonderful as any other.


  • 1½ cups of all-purpose flour
  • 1 tspof baking powder

  • Spoon batter into the prepared pan, slot it into the heated oven and bake for 30 to 35minutes.
  • When done, cool in pan for about 7 to 10minutes, and then remove from pan to cool off on a wire rack.

You may now serve or store as preferred.
