I first began using zucchini bread recipes when I received a small zucchini recipe book as a birthday gift from a former school colleague. He knew I loved baking. 1: MY FIRST ZUCCHINI BREAD RECIPE

First on the list is the first and easy zucchini bread recipe I used. The bread made from this is a one of subtle sweetness and of a soft smooth texture. You should try this out – It’s an easy zucchini bread recipe that yields just 2 loaves. Alter the ingredients to suit your serving size.

INGREDIENTS

  • 1 pound of zucchini to be grated to 3 cups
  • 3 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • ¼ teaspoon of baking soda
  • 2 teaspoons of cinnamon
  • ¼ teaspoon of nutmeg
  • 1 teaspoon of salt
  • 2 large eggs
  • 1 cup of sugar
  • ½ cup of brown sugar

DIRECTIONS:

  • Get your oven preheated to 350°F and grease two loaf pans of 8×4-inch dimensions.
  • Get your trimmed zucchinis grated and squeeze them in cheese cloths.
  • Pour flour, baking soda, baking powder, and the spices into a size able bowl and mix to combine.
  • Whisk your eggs, olive oil, vanilla extract and sugars in another bowl.
  • Toss your zucchini, nuts and chocolate chips into the flour mix, pour in the wet mixture as well and then stir until they are evenly mixed.
  • Spoon batter into the loaf pans and bake for 45 to 50 minutes, until an inserted needle is pulled out clean.
  • If bread is ready, eject from oven and cool in pans for 10 minutes before moving to a cooling rack.

2: LEMON ZUCCHINI BREAD

As I kept on trying an exceptional recipe for zucchini bread each week, I only came across this totally healthy zucchini bread recipe. With lemon inclusive in the ingredients, this makes awesome bread; not so sweet but light weighted and fine textured. It’s about just an hour and 14 minutes cooking time.

INGREDIENTS

  • 1½ cups of shredded zucchini
  • ¾ cup of white sugar
  • 1 egg
  • ½ cup of vegetable oil
  • 1½ cups all-purpose flour
  • ½ teaspoon of salt
  • ½ teaspoon of baking soda
  • ¼ teaspoon of baking powder
  • 1 teaspoon of ground cinnamon
  • 2 teaspoons of lemon zest

DIRECTIONS:

  • Preheat your oven to 325 degrees F and grease a loaf pan of 8×4 inch dimensions.
  • Beat in the zucchini together with egg, sugar and oil in a medium bowl.
  • In another bowl, sift your flour together with baking soda, salt, and baking powder; stir in cinnamon and lemon zest as well.
  • Now, blend the flour mixture into the mix of zucchini until evenly mixed and spoon out the batter into the readied pan.
  • Bake in the heated oven for 45 minutes, until needle-tested ready.
  • If ready, eject from oven and cool for 10 minutes in the pan before transferring to a wire rack for complete cooling.

3: CHOCOLATE CHIP ORANGE ZUCCINI BREAD RECIPE

You wouldn’t want to miss this recipe for zucchini bread. It‘s one that is going to keep friends and family smiling all day long. My cousin always brags about it as his best zucchini bread recipe. Well, it’s not mine though, but I must confess that this makes some really tasty bread.

INGREDIENTS

  • 3 eggs
  • 2 cups of white sugar
  • 1 cup of vegetable oil
  • 2 teaspoons of vanilla extract
  • 2 cups of grated zucchini
  • 1 cup of chopped walnuts
  • 1 cup of semisweet chocolate chips
  • 1 tablespoon of orange zest
  • 3 cups of all-purpose flour
  • ¼ teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • ½ teaspoon of ground cinnamon
  • 1 teaspoon of ground nutmeg

DIRECTIONS:

  • Preheat your oven to 350 degrees F and grease two 9×5-inch loaf pans.
  • Sift flour together with baking powder, soda, spices and salt.
  • Beat eggs, in a size able bowl, until light and fluffy. Beat in sugar as well until well blended.
  • Add and stir in the oil, zucchini, vanilla, nuts, orange rind and chocolate chips.
  • Blend in the sifted mix till evenly mixed and then spoon the batter into your loaf pans.
  • Then, bake for 50 minutes. When bread is done, withdraw from pans and cool.
  • This is a special type of bread which must be chilled before slicing. Serve and enjoy.

4: ZUCCHINI COCONUT LOAF

This luscious and spicy bread is made from a very easy zucchini bread recipe – The kind of bread which is always getting lost from the fridge. These will definitely make a wonderful treat for your guests at home. All you need is to get the ingredient below and dedicate 1 hour and 12 minutes of your time to bake this.

INGREDIENTS

  • 1 egg
  • ½ cup of vegetable oil
  • 1 cup of white sugar
  • 1 cup of grated zucchini
  • ½ teaspoon of vanilla extract
  • 1½ cups of all-purpose flour
  • ½ teaspoon of baking powder
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt
  • ¾ teaspoon of ground cinnamon

DIRECTIONS:

  • Boil one cup of water in a small pan, add the currants to boil for 2 minutes and then drain.
  • Beat egg, sugar and oil in a bowl, and then stir in vanilla and zucchini.
  • Pour the flour in another bowl and stir in soda, baking powder, cinnamon, salt, nutmeg, coconut, currants and walnuts until evenly combined.
  • Now, pour this flour mixture into the egg mixture and stir to form a moist and even batter.
  • Bake for an hour or until tested-ready with a needle. Then, remove from oven and cool in the pan for 10 minutes before moving it to a cooling rack.

5: BANANA-ZUCHINI BREAD

  • Beat eggs, in a size able bowl, until light and fluffy. Add in the oil, brown and white sugar, mashed bananas and grated zucchini as well as vanilla. Blend them until uniformly mixed.
  • Now, stir in your flour, baking powder and baking soda, cinnamon, and salt. When the mix is uniformly, add and mix in nuts and cranberries too.
  • Spoon the batter into the readied pans and bake for about 50 minutes. When done, eject from oven and cool in the pans for about 5 to 10 minutes before moving to a cooling rack.

6: APPLE AND ZUCCHINI BREAD RECIPE

This is more likely to be my topmost among zucchini bread recipes. Well, maybe that’s because I’m really fond of apples but this potential best zucchini bread recipe makes marvelous breads. It is very easy as well. All you’ll need is about 1 hour, 15 minutes and the ingredients below to bake 2 loaves.

INGREDIENTS:

  • 1 cup of finely grated zucchini
  • 1 cup of grated green apple (peeled)
  • 1¼ cups of packed brown sugar
  • 1 cup of canola oil
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 3 cups plus ½ teaspoon of all-purpose flour
  • ¼ teaspoon of kosher salt
  • 1½ teaspoons of baking powder
  • 1½ teaspoons of baking soda
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of freshly ground nutmeg
  • 1½ cups of chopped walnuts

DIRECTIONS:

  • Get your oven preheated to 375 degrees F.
  • Spray 2 baking pans (loaf pans) with nonstick spray and then line the pans with nonstick or parchment papers and spray them also.
  • Mix and stir the zucchini, brown sugar, apple, eggs, oil and vanilla in a size able bowl, until combined.
  • Afterwards, pour the 3 cups of flour, baking powder, salt, baking soda, nutmeg as well as cinnamon into the bowl and stir well to mix.
  • Get the nuts coated by tossing them with ½ of flour – This is to prevent sinking in the batter. Afterwards, stir them into the mixture.
  • Now, spoon the batter into the two loaf pans and bake for between 50 minutes to 1 hour, until an inserted needle comes out clean. If ready, take out breads and cool on a rack.

7: RECIPE FOR ZUCCHINI BREAD WITH FRIED CRANBERRIES

Here is another marvelous and easy recipe for zucchini bread. This only takes up to 1¼ hours to make one large loaf (9 by 5 inch loaf).It’s a classy piece of bread.

INGREDIENTS

  • 1 stick of unsalted butter plus extra for greasing (melted)
  • 1¼ cups of all-purpose flour
  • ¾ cup of granulated sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • ½ teaspoon of baking soda
  • ½ teaspoon of ground cinnamon
  • ½ teaspoon of grated nutmeg
  • 1 cup of dried cranberries
  • 2 large eggs
  • ½ cup of plain yogurt
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of grated orange zest
  • 1 cup of shredded zucchini (squeezed and dry)

DIRECTIONS:

  • Preheat your oven to 350 degrees F and grease the loaf pan with some butter.
  • Pour the flour into a size able bowl and whisk along with baking powder, sugar, salt, nutmeg and cinnamon. Add the cranberries afterwards.
  • In another bowl of medium size, whisk eggs together with the butter, yogurt, orange zest and vanilla until evenly mixed. Stir in your shredded zucchini afterwards.
  • Now, fold this latter mixture into the earlier one. Stir and mix till just combined.
  • Spoon batter into the readied pan and bake for about 55 minutes, until a needle pressed through comes out clean.
  • If ready, eject from oven and cool in pans for about 30 minutes, and then transfer to a cooling rack for complete cooling.

8: CHEESY GARLIC ZUCCINI BREAD

This wonderful recipe for zucchini bread cooks 4 mini loaves in just 40 minutes. The cheese and veggies are …? It’s really indescribable. It has all you would ask for and the taste is just fantastic.

INGREDIENTS

  • 3 cups of all-purpose flour
  • 4 teaspoonsof baking powder
  • 1 teaspoon of salt
  • ½ teaspoon of baking soda
  • ½ teaspoon of garlic powder
  • 1 cup of shredded zucchini
  • ¾ cup of shredded cheddar cheese
  • ¼ cup of finely chopped green onion
  • 1 Tablespoon of fresh dill
  • 2 large eggs
  • 1 cup of buttermilk
  • 4 tablespoons of butter(melted)

DIRECTIONS:

  • Get your oven preheated to 350 degrees F and grease four mini loaf pans.
  • Mix flour, salt, baking powder, garlic powder and baking soda in a large bowl and whisk until combined.
  • Add in and stir the zucchini, green onion, cheddar cheese and dill.
  • In another bowl, beat in eggs and mix with butter and buttermilk.
  • Now, pour the latter mixture into the earlier mixture and stir gently till evenly mixed.
  • Pour or scoop into the loaf pans and bake for 20 to 25 minutes, or until an inserted needle come out clean.
  • If ready, allow it between 10 minutes to cool before you remove from pan and cool off completely.
